Ellie was an adjunct professor in the New York University Department of Nutrition, Food Studies and Public Health. Ell ie also held the position of director of nutritional services at the prestigious La Palestra Center for Preventative Medicine, where she worked with a team of physicians, psychologists, and fitness specialists to create a multifaceted obesity treatment program.

In her years in private practice she counseled a wide variety of clients, from homemakers and CEOs, to notable celebrities and models. Ellie was also a Wilhelmina model herself for more than ten years. She received her bachelor's degree, with honors and distinction, in clinical nutrition from CornellUniversity and her master's in nutrition education from ColumbiaUniversity.
